The “Tipico Lodigiano” cheese is the progenitor of all the grainy structured cheeses, heir of the ancient Granone Lodigiano cheese. It is a low-fat hard cheese, with 2.5% fat raw milk from cows milked twice a day.
Milk comes from cows mostly hay fed, particularly Ladino clover that naturally grows on the Lodigiano land and for this reason marked on the cheese wheel.
Furthermore, Tipico Lodigiano is extremely digestible because its proteins, during ageing, have got broken into amino-acid extremely assimilable by our organism. This cheese is lactose free and rich of calcium.
